Zucchini Fries with Marinara Sauce

What is one of America’s favorite foods? If you said french fries, you are correct.

I have a healthier and tasteful twist to french fries. Zucchini Fries! A fun twist on zucchini that will leave you reaching for one more bite. Plus the air fryer allows you to crisp up the batter without frying in oil. The struggle is real when it comes to junk food cravings, thankfully these zucchini fries are a great way to help fight the urge to munch on not-so-good snacks. Even when we are trying to stay our healthiest, little cravings can sneak up on us. They’re quick, easy and they pair great with marinara sauce or ranch dressing.

These are a great side dish with the classic Italian flair that you find in similar dishes like Eggplant Parmesan, Caponata and Spaghetti Alla Carbonara. If you love fries but want to start eating more veggies, then this air fryer zucchini fries recipe is perfect for you. With a similar crunch to french fries, you will be just as addicted.

Ingredients 

  • Avocado Cooking Spray
  • 4 small zucchini
  • 1/2 cup parmesan cheese
  • 1/2 cup Panko bread crumbs
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Oregano
  • 1 teaspoon garlic powder
  • Salt and Pepper to taste
  • 2 tablespoons of Parsley

Instructions 

  1. Cut the zucchini into fries or the shape of your choice. Preheat the air-fryer if needed for five minutes.
  2. On a shallow plate, combine the parmesan cheese, Panko, Italian seasoning, salt and pepper.
  3. Spray the zucchini with avocado oil then gently press each into the Parmesan mixture to evenly coat on all sides.
  4. Spray a bit of oil on the bottom of your air fryer and air fry them at 400 degrees for 8-10 minutes, or until golden and crisp on the outside.
  5. Garnish with freshly chopped parsley and enjoy!
