Sitting in your fruit bowl are a couple sad lonely overripe bananas. Then obviously the only course of action is to get out the pans and ingredients to make the usual: banana bread. It’s a tale as old as time. Unless what if I told you there’s a different delicious treat that only requires one banana minimum and takes 20 minutes to make including a 10 minute bake time. The answer to this dilemma is to make a delectable batch of banana oatmeal chocolate chip cookies.
I’m not saying I hate banana bread, it’s definitely a classic for a reason, but baking bread of any kind can be time consuming and faulty. Cookies are so much easier in my opinion having a much higher success rate and short baking time of only 10 minutes. These cookies are genuinely mouth watering and I made them with my friend for a movie night, and they were quick, easy and fun to make. They’re also a touch healthier than the usual chocolate chip cookies as you use bananas, oats and maple syrup for ingredients instead of artificial sweeteners. 1 banana (about 110g)
1/2 cup (113g) melted butter
3/4 cup (150g) light brown sugar
1 egg
1 tsp (4g) vanilla
1/2 tbsp molasses (maple syrup is great alternate for this)
1 1/4 cup (160g) flour
1/2 tsp (3g) baking soda
1 tsp (3g) cinnamon
1/2 tsp (3g) salt
2/3 cup (113g) chocolate chunks/chips
3/4 cup (60g) oats
Mash banana and add in melted butter, sugar, egg yolk and vanilla. In another bowl, whisk together flour, salt, baking soda and cinnamon. Fold in the chocolate and let chill in the fridge for up to an hour for ultimate results. Bake at 350 for 10-12 minutes. These are soft cookies so let cool a bit on the tray before transferring/eating. Enjoy!
