Having a midnight snack is mandatory for when you get those late-night munchies, whether you’re having a nighttime study session, simply relaxing watching TV or enjoying your time alone. This mini air fryer pizza is a game-changer in these scenarios. You could add any of your favorite toppings making this snack fully customizable. It makes around six servings depending on how many biscuits you use and prep time estimates around ten minutes.

Ingredients:

  • 1 jar of your favorite pizza sauce
  • 1 bag of mini pepperoni
  • 1 bag of shredded pepper jack cheese (or you can choose whichever cheese you like best, as long as its shredded)
  • 1 container of refrigerated Pillsbury Southern Homestyle biscuits
  • A “sprinkle” of Italian seasoning

Directions:

  1. Take one of your Pillsbury biscuits from the container and lay it directly into the basket of the air fryer and spread the dough down into a pizza shape as if you were using a rolling pin.
  2. Add a layer of pizza sauce to your liking. Next season with Italian seasoning, sprinkle the shredded cheese on top (however much your heart desires) and add your mini pepperoni. Assembly is done.
  3. Cook the pizza on the “Reheat” option of your air fryer, which should be 350 degrees depending on which air fryer you have (I have the standard Ninja air fryer). Cook for five minutes or until the bottom of your dough is golden brown and all the cheese is perfectly melted.
  4. This step is optional, but you can garnish with parsley and/or a light sprinkle of Italian seasoning for looks.
  5. Enjoy your late night snack!

This snack is so simple to make and is perfect for not just late night snacks, but also a regular lunch if you’re in a time crunch.
